Merci is a Missouri Wild Ale crafted by Side Project that is blended for their friend Paul Hayden at The Wine and Cheese Place in St. Louis. This unique ale combines a blend of 14% Saison du Fermier fermented in French Oak with a Saison/local microflora mixed culture and then aged in an American Oak Foedre for 6 months, 31% Saison du Fermier aged in a heavy toast American Oak Foedre with a Saison/local microflora mixed culture for 4 months, and 46% Missouri Wild Blond Ale aged in a French Oak Foedre from which they have been drawing pieces for the past 4 years, resulting in a flavorful and complex blend. This expert blend also incorporates a 9% Missouri Wild Ale aged in Missouri Oak Chardonnay barrels for 3 years, adding a higher acid base and complementing the final 6.3% alcohol content.
