Step into the essence of our flagship wine, crafted to honor the time-honored traditions of sherry production. Anchored at its heart is the Solera System, a testament to both our heritage and pioneering spirit. Each year, a fraction of wine is carefully drawn from our line of barrels, replenished with youthful spirits. This age-old technique, akin to nurturing a sourdough starter, imparts the young wine with the wisdom and depth of its predecessors, resulting in a continuously evolving masterpiece.
The Solera is more than just a wine; it's a chronicle of our journey bottled for posterity. Rooted in our beginnings in 2006, our Solera System, meticulously curated with premium barrels and artisanal blends, embodies our story. We meticulously refill these vessels exclusively with our finest harvests. Through the years, our Solera has yielded a total of 1,251 liters of liquid artistry, spread across barrels of varying sizes. However, we draw a maximum of 150 liters annually (equivalent to 300 bottles), preserving and refining the distinct character of our process. Each bottle is adorned with a unique number and our seal of authenticity, with the year of bottling marked by a distinctive hashtag (#).
